Three generations of artisanal expertise
Catherine, Valérie and Sophie decided to take over the family business and perpetuate the know-how inherited from their father. At their butcher’s store in Auxerre, they select the best Charolais, the top beef breed in the region.
Thanks to specifications agreed with their six locally-based breeders, they judge the quality of their steaks in terms of taste.
